Saturday was salsa day at our house.  If you’ve read my blog for very long you know my boys love salsa.  A bag of chips, a pint of salsa makes for one teenage boys afternoon snack.  So we need lots of salsa.  Gotta keep those boys growing, cause 6 feet tall is just not big enough,  hee hee.  So we picked, chopped, simmered and stirred this big pot of salsa.

I joked with Alex that next year we wouldn’t have to make as much cause he would be away at school.  ‘Nope, just means you’ll have to make me my own personal supply.’ 

To which I replied ‘I’d give him the recipe and he could make his own.’  

He challenged me to a salsa cook off.

 ‘OOOOOO, I’m up for that’, I said. 

So the challenge is on.  I figure I win either way.  ‘Cause it’s one less pot of salsa I have to make. 

 

As requested my salsa recipe  (remember nothing is set in stone here.  Adjust to your own liking or to what you have on hand.  Heaven knows I do.)

 

10 hot peppers

35 lbs. tomatoes

6 onions

3 green peppers

1 garlic clove

3 Tbs. oragino

3 Tbs. cumin

1 bunch cilantro

1 c. sugar

1/2 c. salt

1 c. vinager

 

Chop up veggies. Add herbs, sugar, salt and vinager.  Cook until thick.  Process in pint jars for 20 min.

Enjoy it really is yummy!
