
It’s that time of year when being able to find all those customer appreciation cards comes in handy. It is also the time for pies. With Thanksgiving tomorrow, and my families love of pies, I will be making a few. I must admit that I cheated with the cheesecake and bought one at Costco. But later today I will be making a coconut cream and pumpkin pie. I will post a picture once they are done. Because we make so many pies I make my pie crust in bulk. Here is my recipe it makes enough for 7- 9″ pies.
Pie Crust in Bulk 6 cups flour 2 tsp. salt 2 1/3 cups shortening 1 1/4- 1 1/2 cups cold water In a bowl, combine flour and salt. With pastry blender cut in shortening until mixture resembles cornmeal in texture. Add 1 1/4 cups of water all at once. Mix lightly with a fork until water is absorbed and mixture forms a ball. If necessary add additional water. Divide into 7 portions. Roll out for pies or roll into balls and wrap first in plastic wrap then heavy duty foil and store in freezer for later. I love that card holder. Thanks for the link to the tutorial. I don't think I will ever need to make pie crusts in bulk. I have a very small family. I do like the idea of being able freeze those crusts.
