As a mother there are times when I hate that question. Why must it fall to me to figure this daily dilemma? Does anyone else feel this way? I’m sure I can’t be alone. As a solution I thought I would share a recipe each Wednesday for awhile.
Right now my garden is supply our family with lots of yummy fresh veggies, especially zucchini. My dad says zucchini is what you plant so you can feel like a successful gardener. Well, I’m feeling very successful at the moment so any recipe that uses zucchini at this moment is welcome. Chow Mein with Chicken and Vegetables fits the bill. We have this for dinner often in the summer. It is quick and easy. The hardest thing is cutting up the vegetables. Another nice thing about this recipe is that it is made in a skillet and only takes 15 minutes to cook. So it doesn’t heat up your house during hot summer months.
Have I sold you yet? If so you can find the recipe here. Hope you enjoy it for dinner. I know we will.
I don't have any zucchini but you have sold me. I love simple and quick stir fry.
I tell you I get mighty darn tired of that question when it comes from a 64 year old man who has been in my house for 42 years!! why can't he figure out what is for supper and make it — nope always me, the man can't or won't cook – looking forward to seeing your recipes maybe I can come up with something new to cook
When the zuch finely gets to far ahead of me ( and it will) I use it to make pickle relish instead of cucumbers.
Yum! I need to make more of this kind of dinner.:)
I'm with you … I hate the daily dinner decision!
I hate the dinner decision too. It makes me wonder if I am the only one allowed to come up with dinner plans. Thanks for sharing the recipe
Terry
It is a question that I frequently dread. I made zucchini chips this summer and they were great.
Looks delicious, thanks for the great tip.
