
On those busy days when you just know that at dinner time there is just not going to be time to fix dinner I turn to my crockpot. In other word at least once a week I’m pulling out this wonderful devise and putting it to good use. I can fix breakfast and throw dinner in the crockpot in the process. Then clean up both messes and get on with my day.
One of my family’s favorite crockpot dinners is Butter Chicken. I use 2-3 chicken breasts in place of the thighs the recipe calls for. Just depends on how many will be to dinner. I throw all the ingredients for the sauce in and then add the breasts. I have even thrown them in frozen in a pinch. Then when we are ready to eat I pull out the cardamon seeds and shred the chicken. It’s faster and easier than cutting and cooking the chicken prior to putting it in the crockpot. We serve it over rice.
And for a vegetable we heat up frozen peas in the winter or this yummy Thai Cucumber Salad in the summer. Thanks to my garden we have plenty of cucumbers. It is fresh, light and yummy! What more could you ask for?
